Hey hey!

This is the last Friday in August, how crazy is that?  Summer flew by but I am pumped for cooler fall temps.

No too long ago I went to my friend’s house, Kath Younger, RD of katheats.com.  We met a year ago at the gym and she’s a beast…she inspires me to jump higher, keep lifting, and smile despite how hard the workout is!  Be sure to check out her blog for all kinds of posts on healthy food, lifestyle, and fun.

We got together so that I could officially share a delicious Moroccan Lentil Salad with Lemon Yogurt Sauce that I had made for girls’ night a few weeks earlier.  You better believe there was a lot of One Direction playing while we cooked (it’s a recent guilty pleasure of mine….maybe Kath is to blame?? ;)) and quite a bit of temptation to eat before it was all ready.

I love this recipe because it’s easy, can be vegetarian or easily paired with your favorite protein, can be made ahead, keeps well, and has an exotic flavor profile.

Here are a few of the seasonings you’ll need…feel free to go heavy on the turmeric to get more its anti-inflammatory benefits

Lentils are high in protein, fiber, iron, vitamin B1, and lots of other goodies…plus they’re so easy

Combine everything together for the salad

Colorful, pretty, and ready to go…

Serve with a dollop of the yogurt sauce and a lemon wedge

Voila!  Be happy because you just made a delicious + nutritious recipe!

INGREDIENTS

Lentil Salad

  • 2 cups dry lentils
  • 2 heirloom tomatoes
  • 1 cup shredded carrots
  • 2 red peppers, diced
  • 3 tbsp olive oil
  • 2 tsp coriander
  • 2 tsp cumin
  • 1 tsp paprika
  • ¼ tsp cinnamon
  • ½ tsp allspice
  • 2 tsp turmeric
  • Kosher salt and pepper to taste
  • 1/2 cup of feta for garnish (optional)

Yogurt Sauce

  • 1 cup 2% plain Greek yogurt
  • 3 tbsp feta
  • Rind of 1 lemon, minced
  • Juice of ½ a lemon (reserve other half to slice for serving)
  • 1 tsp olive oil
  • 1 tsp fresh mint, minced
  • Salt and pepper to taste

INSTRUCTIONS

  1. Cook lentils according to package, then add vegetables and seasonings.
  2. In a separate bowl, combine yogurt sauce ingredients.
  3. When ready to serve, place a generous spoonful of yogurt sauce on top of the lentil salad and garnish each portion with remaining feta.
